How to Check If Your Ghee Is Pure: 6 Simple Home Tests

You can catch most adulterated ghee at home in a few minutes. Real ghee melts clean on your palm, turns golden-brown (not white) when heated, and dissolves evenly in warm water. None of these need equipment.

Adulteration is the top worry Indian ghee buyers have, and fairly so. Here are six kitchen tests, and one honest note on their limits.

1. The palm test

Put a little ghee on your palm. Pure ghee melts from body heat and smells nutty. If it sits solid or smells oily, be suspicious.

2. The heat and colour test

Heat a spoon of ghee. Pure cow ghee melts fast and turns golden-brown. Adulterated ghee stays pale or whitish, a sign of vanaspati.

3. The melt and set test

Melt it fully, then let it set. Pure ghee sets evenly and slightly grainy. Separation into layers means mixed fats.

4. The refrigerator test

Melt, pour into a clear jar, and refrigerate. Pure ghee solidifies uniformly. Distinct layers point to blended oils.

5. The starch (iodine) test

Add two drops of tincture of iodine to melted ghee. Blue or blue-black means added starch. Pure ghee does not change colour.

6. The water test

Drop a spoon of ghee into a glass of water. Pure ghee tends to stay together and float. Use it alongside the others, not on its own.

The honest limit of home tests
